A simple Vietnamese soup recipe featuring Yu Choy (Cai Ngot) and ground pork, sautéed garlic, and shallots for added flavor. This nutritious and comforting soup serves 4-6 and is easy to prepare, making it perfect for incorporating greens into your diet.

1: Start by washing and trimming your Yu Choy/Cai Ngot greens. Set aside. 2: In a 6 qt pot, heat 2 tbsp of oil over medium high heat. Once hot, add minced shallots and minced garlic. Sauté for 30 seconds. 3: Add your ground pork and gently break apart. Add a sprinkle of salt. Sauté for 2 minutes. 4: Add 6 cups of water and wait for it to reach a boil - should take about 6 minutes. Start skimming the foam at the top and discard foam. 5: Add the Yu Choy/Cai Ngot to the soup. Gently stir so all greens get cooked in the soup. 6: Season with chicken powder, fish sauce, salt, sugar, and black pepper. Taste and adjust to your liking. 7: Turn off the stove and serve this with hot rice.
